Ingredients
- 1 cup full-fat cottage cheese (preferably small curd)
- 2 large eggs, at room temperature
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon onion powder (optional)
- Pinch of salt and black pepper, to taste (optional)
- Olive oil or cooking spray, for greasing
Instructions
1. Preheat oven to 350°F (177°C) and allow it to fully preheat.
2. Line a quarter sheet baking tray (9×13 inches) with parchment paper and lightly grease with olive oil or cooking spray.
3. In a blender or food processor, combine cottage cheese, eggs, garlic powder, onion powder, and optional salt and pepper. Blend on high for 20-30 seconds until smooth, scraping down sides as needed.
4. Pour batter onto the prepared tray and spread evenly to about 1/4 inch thick using a spatula.
5. Bake on the center rack for 30-40 minutes until firm and lightly golden. Optionally, broil for 1-2 minutes for a crisper finish, watching carefully.
6. Cool on the tray for 10 minutes, then transfer to a cutting board and slice into desired shapes.
Notes
Use whole-milk cottage cheese for best flavor and texture. Store leftovers in an airtight container in the fridge for up to 3 days; reheat in oven or skillet. For a firmer or crispier flatbread, add 1 tablespoon almond flour or parmesan cheese to the batter.
