Instructions
1. Preheat oven to 350°F (175°C) and prepare a 9×5″ loaf pan
2. Blend bananas, cottage cheese, eggs, syrup, vanilla, and cinnamon until smooth
3. Whisk flour, baking soda, baking powder, and salt
4. Fold dry ingredients into wet until just combined
5. Stir in mix‑ins and reserve some for topping
6. Bake 50–60 min until a toothpick shows moist crumbs (tent with foil if browning too fast)
7. Cool in pan 10 min then finish cooling completely before slicing
Notes
Use ripe bananas for natural sweetness. Blend cottage cheese for a smooth loaf or leave curds for texture. Fold gently—overmixing makes it dense. Tent with foil for even browning.
