- 3 ripe bananas, mashed
- ½ cup full‑fat cottage cheese (blended or slightly chunky)
- 2 large eggs
- ½ cup maple syrup or honey
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp salt
- 2 cups whole wheat flour (or mix of oat & almond flour)
- 1 tsp baking soda
- (Optional) ½ cup chocolate chips or chopped walnuts (+ extra for top)
Instructions
1. Preheat oven to 350°F (180°C); line or grease a 9×5″ loaf pan
2. In a bowl or blender, combine mashed bananas, cottage cheese, eggs, sweetener, vanilla, cinnamon, and salt until smooth
3. Whisk flour and baking soda in a separate bowl
4. Gently fold dry ingredients into wet until just incorporated; avoid overmixing
5. Fold in chocolate chips or walnuts, reserving some to sprinkle on top
6. Pour batter into pan and bake 50–55 minutes until a toothpick emerges clean (cover with foil if browning too fast)
7. Cool in pan 10 minutes, then finish cooling on a rack before slicing
Notes
Blend cottage cheese for smoother loaf or leave slightly chunky. Use very ripe bananas for sweetness. Don’t overmix after adding flour. Cool completely for clean slices.
