A naturally sweet, ultra‑moist, flour‑free banana bread full of protein and warmth—perfectly fluffy and easy to make!

Ingredients

  • 3 very ripe bananas, mashed
  • ½¾ cup full‑fat cottage cheese
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (optional)
  • 1½ cups oat flour (or a blend with almond flour)
  • 1 tsp baking soda
  • ½ tsp salt
  • (Optional) ½ cup mix‑ins like chocolate chips, walnuts, or berries

Instructions

1. Preheat oven to 350°F (175°C) and prepare a 9×5″ loaf pan

2. Mix mashed bananas, cottage cheese, eggs, syrup, vanilla, and cinnamon until well combined

3. Stir in oat flour, baking soda, and salt until just mixed

4. Fold in mix‑ins, reserving some for the top

5. Bake 40–50 min until a skewer comes out clean, tent with foil if browning too fast

6. Cool in pan 10 min, then finish cooling on rack before slicing

Notes

Use very ripe bananas for natural sweetness. Blend cottage cheese for a tender crumb, or leave slightly chunky for texture. Tent with foil if top browns too quickly.
