  • 2 boxes (family size) puffed corn cereal (e.g. Corn Pops or Chester’s)
  • ½ cup light corn syrup
  • 1 cup salted butter (2 sticks)
  • 2 cups brown sugar
  • 1 tsp vanilla extract
  • ½ tsp baking soda

Instructions

1. Preheat oven to 250 °F (120 °C).

2. Spread cereal in a large baking pan.

3. In saucepan over medium-low heat, combine corn syrup, butter, and brown sugar. Let boil gently without stirring for ~3 minutes.

4. Remove from heat; stir in vanilla and baking soda until mixture lightens.

5. Quickly pour caramel over cereal and toss to coat.

6. Bake at 250 °F for 60 minutes, stirring every 15 min to separate clusters.

7. Let cool completely before serving.

Notes
