Ingredients
- 1½ cups mashed ripe bananas (about 3–4 bananas)
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup mini chocolate chips, plus more for topping
Instructions
1. Preheat oven to 325°F (165°C). Line a 9×5-inch loaf pan with parchment paper or grease well.
2. In a large bowl, whisk together mashed bananas, melted butter, brown sugar, eggs, and vanilla until smooth.
3. In a separate bowl, whisk together the flour, baking soda, and salt.
4. Gently fold the dry mixture into the wet mixture just until combined. Do not overmix.
5. Stir in chocolate chips and pour batter into prepared loaf pan. Sprinkle extra chips on top if desired.
6. Bake for 60–70 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
• Use very ripe bananas (heavily speckled) for best flavor and moisture. • Avoid overmixing the batter to keep your bread tender and fluffy. • Customize by adding nuts, cinnamon, or a chocolate drizzle. • Wrap cooled slices individually for a quick on-the-go snack. • Store at room temperature for up to 4 days or freeze for longer storage.
