Ingredients

  • Ramen noodles (1 pack)
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp dark soy sauce
  • 12 tsp chili oil or chili garlic sauce
  • 12 tsp brown sugar
  • 1 tbsp unsalted butter
  • 12 cups reserved noodle water
  • ½ tsp chicken bouillon
  • ¼ tsp ramen seasoning
  • Optional: bok choy
  • ½ tsp Everything But The Bagel seasoning
  • 1 scallion, diced
  • Sriracha (to taste)
  • Extra chili oil (to taste)
  • ½ lime, juiced

Instructions

1. Cook ramen noodles as per package; reserve 1–2 cups noodle water.

2. Melt butter with minced garlic and chili oil in a saucepan, cooking ~2 minutes.

3. Add soy sauces and brown sugar; bubble and thicken ~2 minutes.

4. Pour in reserved noodle water, bok choy (if using), bouillon, garlic/onion powders, and seasoning; simmer ~5 minutes.

5. Add noodles and dark soy sauce; transfer to bowl and top with scallions, bagel seasoning, sriracha, chili oil, and lime juice.

Notes

Use bok choy or baby greens for added nutrition. Adjust chili oil and sriracha to taste. Reserve noodle water to enhance sauce consistency. Leftovers can be refrigerated for up to 2 days, but noodles soften.
