  • ½ cup full‑fat cottage cheese (blended or slightly chunky)
  • ½ cup unsweetened applesauce or neutral oil
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1¾ cups all‑purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • (Optional) ½ cup chocolate chips or chopped nuts (+ extra for top)

Instructions

1. Preheat oven to 350°F; grease or line a 9×5″ loaf pan

2. In a bowl or blender, mix mashed bananas, cottage cheese, applesauce or oil, sugar, eggs, vanilla, cinnamon, and salt until just combined

3. Whisk flour, baking powder, and baking soda in a separate bowl

4. Gently fold dry into wet until just combined; avoid overmixing

5. Fold in optional mix‑ins, reserving some for topping

6. Pour batter into pan and bake 50–60 min until a toothpick comes out clean (cover with foil if browning too fast)

7. Cool in pan 10 min, then remove and cool completely before slicing

Notes

Use ripe bananas for sweetness. Blend cottage cheese for smoother crumb. Don’t overmix. Cover with foil if top browns too fast.
