- 3 very ripe bananas, mashed
- ½ cup cottage cheese (blended or slightly chunky)
- 2 large eggs
- ⅓ cup neutral oil or applesauce
- ½ cup brown sugar or maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon (optional)
- 1¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- (Optional) ½ cup chocolate chips or chopped nuts (+ extra for top)
Instructions
1. Preheat oven to 350°F and prep a 9×5″ loaf pan
2. Combine bananas, cottage cheese, eggs, oil/applesauce, sweetener, vanilla, and cinnamon until smooth
3. Whisk flour, baking powder, baking soda, and salt in a separate bowl
4. Gently fold dry mixture into wet until just combined
5. Fold in mix‑ins, reserving some for topping
6. Bake 50–60 min until a toothpick shows moist crumbs (tent with foil if browning too fast)
7. Cool in pan 10 min, then finish cooling completely on a rack before slicing
Notes
Use ripe bananas for natural sweetness. Blend cottage cheese or leave it chunky for added texture. Don’t overmix. Tent with foil if loaf top browns too quickly.
