- ½ cup brown sugar or maple syrup

- 1 tsp ground cinnamon (optional)
- 2 cups all‑purpose or oat/almond flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- (Optional) ½ cup chocolate chips or walnuts (+ extra for top)
Instructions
1. Preheat oven to 350°F and grease or line a 9×5″ loaf pan
2. Combine bananas, cottage cheese, eggs, oil/applesauce, sugar, vanilla, and cinnamon until smooth
3. Whisk flour, baking powder, baking soda, and salt in a separate bowl
4. Gently fold dry ingredients into wet until just combined
5. Stir in chocolate chips or walnuts, reserving a few for topping
6. Bake 50–60 min until a toothpick shows moist crumbs (tent with foil if browning too fast)
7. Cool in pan 10 min, then remove and cool completely before slicing
Notes
Use ripe bananas for natural sweetness. Blend cottage cheese for smoother texture. Fold gently to avoid toughness. Tent with foil if top browns too quickly.
