Instructions

1. Preheat oven to 350°F and grease or line a 9×5″ loaf pan

2. Combine bananas, cottage cheese, eggs, oil/applesauce, sugar, vanilla, and cinnamon until smooth

3. Whisk flour, baking powder, baking soda, and salt in a separate bowl

4. Gently fold dry ingredients into wet until just combined

5. Stir in chocolate chips or walnuts, reserving a few for topping

6. Bake 50–60 min until a toothpick shows moist crumbs (tent with foil if browning too fast)

7. Cool in pan 10 min, then remove and cool completely before slicing
