Ingredients
- 3 very ripe bananas, mashed
- ¾ cup cottage cheese (blended or slightly chunky)
- 2 large eggs
- ½ cup maple syrup or brown sugar
- ⅓ cup neutral oil or applesauce
- 1 tsp vanilla
- 1 tsp ground cinnamon (optional)
- 1¾ cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- (Optional) ½ cup chocolate chips or nuts (+ for top)
Instructions
1. Preheat oven to 350°F (175°C) and prepare a 9×5″ loaf pan
2. Blend bananas, cottage cheese, eggs, syrup/sugar, oil, vanilla, and cinnamon until smooth
3. Whisk flour, baking powder, baking soda, and salt in another bowl
4. Gently fold dry ingredients into wet until just combined
5. Fold in chocolate chips or nuts, reserving some for topping
6. Bake 50–60 min until a toothpick inserted comes out clean (tent with foil if browning too fast)
7. Cool in pan 10 min, then let cool completely before slicing
Notes
Use ripe bananas for natural sweetness. Blend cottage cheese for a smoother loaf or leave curds for texture. Fold gently, and tent with foil if top browns quickly.
